One of my all time favorite snacks is simply chopped veggies. Why do we always try to overcomplicate things?! Shop your local farmers market to get the freshest and most cost effective seasonal veggies. Chop them up, divide them into snack baggies and throw them in the refrigerator. Throughout the week they will be ready to grab and go! Pair a veggie snack bag with hummus, nut butters or low fat cheeses, within moderation.

- Bell peppers (all colors)
Recipe – Broccoli Slaw Salad
Add broccoli slaw, shredded carrots, shredded brussel sprouts, halved cherry tomatoes and chopped walnuts to a bowl. Drizzle fresh lemon juice, extra virgin olive oil and salt and pepper on top to taste. Toss to mix.
Recipe – Avocado Slaw
Add broccoli slaw, shredded carrots, diced ruby red grapefruit, chunked avocado, and halved cherry tomatoes to a bowl. Add juice of one lime and salt and pepper to taste. Toss to mix the ingredients and chill in the refrigerator overnight.
Recipe – Asparagus & Prosciutto
Wrap thick asparagus spears with thinly sliced prosciutto. Roast in the oven for approximately 8-9 minutes, or until the asparagus has reached your desired tenderness.
